Wild Rice Pilaf
Serve with Steve's Beef Tongue and Fruit Compote.
- 1 cup wild rice
- 1 6.3 oz box Near East brand Garlic & Herb Rice Pilaf
- ½ cup reduced tongue cooking liquid (see tongue recipe)
- butter
- salt
To cook wild rice, add 3 cups water to pot and bring to boil. Add wild rice, 1 Tbs butter, and 1 tsp salt. Cover and simmer for 1 hour.
Make rice pilaf according to directions on box. When the pilaf has finished cooking, combine the pilaf, wild rice, and reduced tongue cooking liquid in a large bowl and mix well. Place bowl uncovered in microwave and heat until rice mixture is steaming. Allow rice mixture to sit uncovered for several minutes while occasionally mixing with a large spoon to allow excess liquid to evaporate. If rice mixture is still too wet, then heat again in microwave and repeat process until the rice mixture is fluffy.
