Thai Cucumber Salad
- 1 cup thinly-sliced cucumbers
- 2 oz. red onion
- 1 tsp thinly sliced fresh Thai chili
- ¼ cup rice vinegar
- 2 Tbs warm water
- 3 Tbs sugar
- ¼ tsp salt
Mix together and refrigerate for 24 hours.
Serve with Pork Satay and Thai Peanut Sauce.
