Melanie's Sweet Potato Casserole
- 2 cups grated raw sweet potato
- 1 cup milk
- 1 cup sugar
- 2 eggs - slightly beaten
- 2 Tbl melted butter
- 1 tsp cinnamon
- 1 tsp nutmeg
- ¼ tsp salt
- ½ cup raisins
- whole pecans halves to decorate top
Preheat oven to 350ºF. Generously grease a 1½ quart Pyrex dish. Mix ingredients and pour into Pyrex dish.
Bake 40 to 50 minutes or until filling is set. Cover casserole with aluminum foil if necessary to keep pecan halves from over browning. Serves 12
