Marilyn's Squash Casserole
- 24 cups cubed yellow squash
- 1½ cup sour cream
- 3 cups grated Parmesan cheese
- 6 Tbl shredded mild cheddar cheese
- 1 Tbl salt
- 1 tsp paprika
- 6 egg yolks - beaten
- 6 Tbl chopped chives
- 1 cup (2 sticks) butter
- ½ cup dry bread crumbs
Simmer squash until tender and drain. Combine sour cream, 6 Tbl melted butter, cheese, salt, and paprika. Stir mixture over low heat until cheese is melted. Stir in egg yolk and chopped chives. Mix squash into mixture.
Place mixture in buttered baking dish. Dot with remainder of butter, grated cheese, and bread crumbs. Bake at 350º until bubbly and brown, approximately 25-30 minutes. Serves 24.
