Spicy Shrimp in Red Sauce
Coat 3 lbs of peeled shrimp in the following and let stand 1 hour:
- 2 tsp salt
- 2 tsp MSG
- 1 Tbs sesame oil
- 1 Tbs tapioca starch
- 2 egg white
- 1 dash black pepper
Stir in 4 egg yolks and 6 Tbs cornstarch and deep-fry in wok until the batter is cooked - about one minute. Chop the following and stir fry in 4 Tbs oil:
- 1 head garlic
- equal amount of ginger root
- equal amount of scallions
- 4 hot dried red chili peppers
- 1 green bell pepper
Add the following and bring to boil, then pour over shrimp:
- 5 Tbs sugar
- 4 Tbs rice vinegar
- 4 Tbs water
- 2 tsp salt
- 8 Tbs ketchup
- 2 Tbs sesame oil
- 2 tsp tapioca starch
