Melanie's Pork Chops with Pomegranate-Blueberry Sauce
- 1½ lb pork butt steaks (pork chops)
- 1 cup POM pomegranate-blueberry juice
- ¾ cup frozen blueberries
- ½ Tbs molasses
- 1½ Tbs light brown sugar
- ½ Tbs bourbon
- 2 to 3 Tbs olive oil
- Worchester sauce
- garlic powder
- ground black pepper
- salt
Heat oven to 375º. Sprinkle pork chops with salt, pepper, and garlic power and sear in hot oil over medium high heat. Drizzle with Worchester sauce. Add pomegranate-blueberry juice to the pan and place the pan in the oven for 8 minutes.
Place pork chops on a plate. Add blueberries, sugar, and molasses to the sauce. Reduce until thick and add the bourbon. Slice pork chops and arrange slices in a fan with sauce.
