Melanie’s Pecan Pie
- 1 cup light corn syrup
- 2 Tbs all-purpose flour
- ¼ cup sugar
- 2 eggs
- ¼ tsp salt
- 1 tsp vanilla
- 1¼ cups broken pecans
- 9-inch regular (not deep dish) unbaked pie crust*
Preheat oven to 375ºF. Spread pecans in an unbaked pie crust.
In a large bowl, whisk together the syrup and flour. Add remaining ingredients: sugar, eggs, salt, vanilla and whisk until blended completely. Pour filling, over the pecans, into the pie crust.
Bake at 375ºF for 40 to 50 minutes until the filling is set. If necessary, cover edges of pie crust with aluminum foil about halfway through baking to prevent crust from getting too brown before the pie is done.
*NOTE: Use Publix brand regular frozen pie crusts if available.
