Hard Boiled Eggs

Place eggs in a pot of cold water with 1 Tbl of baking soda. Water level should be about 1 inch higher than top of eggs.
Bring water to boil without lid for 2 minutes. Remove from heat, place lid on pot and let stand for 20 minutes.
Place eggs in bowl of ice water until cool to the touch.
Peel eggs by first crunching both ends and then rolling the eggs around on a hard surface until the shell is thoroughly crunched. Start peeling by first removing the flat end with the air pocket. If the shell doesn't easily come off, insert a small spoon between the shell membrane and the egg, and slip the spoon around to separate the shell membrane from the egg. The shell should then be able to be removed without damaging the egg.
