Eggs Goldenrod
- 6 eggs
- 1 Tbs butter
- 1 Tbs flour
- 6 oz evaporated milk
- 2 oz heavy whipping cream
- 4 slices of bread - toasted
- paprika
Make a white sauce (See White Sauce.).
Hard boil eggs. Separate whites from yolks.
Place whites in a food processor and process for several seconds until the whites form a smooth paste. While heating the white sauce in a pan, mix the egg whites into the sauce. Add milk as necessary if the mxture is too thick. Do not add so much liquid that the mixture becomes runny. Add salt to taste.
Place yolks in food processor and pulse several times until yolks are ground into a powder but not liquified into a paste.
Toast bread and immediately place heated egg whites and white sauce mixture on the toast. Sprinkle a pile of the powdered egg yolks on top. Sprinkle with paprika and serve immediately.
