Vietnamese Sweet and Sour Fish Sauce
- 3 oz fish sauce
- 13 oz water
- 1 oz lime juice
- 40 g sugar
- 4 cloves garlic
- 1 eye bird chili (Thai chili)
Crush chili, garlic, and sugar in a mortar and pestle. Add warm water, fish sauce and lime juice and whisk to ensure that the sugar is melted. Add more sugar, fish sauce, and lime juice to taste.
