Jim's Vanilla Ice Cream
- 1½ cup milk
- 2 eggs - slightly beaten
- 1½ tsp vanilla
- 6 Tbs sugar
- ¾ cup corn syrup
- dash of salt
- 1¼ cup heavy cream
Gradually stir the milk into the slightly-beaten eggs.
Cook the milk and egg mixture in a double boiler until the mixture coats a dipped spoon. (Do not allow the water get to a rolling boil.)
Stir in the vanilla, sugar, corn syrup, and salt and allow to cool.
Add the cream and place in an ice cream maker machine. Continue to run the ice cream maker until the desired consistency is achieved.
Serve immediately. (The ultra-smooth consistency will deteriorate when placed in a freezer.)
Note: Additional flavoring can be added to this recipe such as peaches plus sugar that has been blended in a food processor for peach ice cream, or a highly-concentrated batch of green tea plus some matcha powder for green tea ice cream.
