Melanie's Peach Crisp
Filling:
- 6 large peaches - about 2½ lbs
- ¼ cup sugar
- 1½ tsp lemon juice
- ½ tsp ground cinnamon
- ½ tsp ground ginger
- pinch of salt
Topping:
- 1½ cup all purpose flour
- ½ cup (1 stick) melted butter
- ½ cup light brown sugar - firmly-packed
- ½ cup dark brown sugar - firmly-packed
- ½ tsp ground cinnamon
- ½ tsp ground ginger
- ¾ tsp salt
Preheat oven to 375°
Filling: In a large bowl combine peaches, sugar, lemon juice, cinnamon, ginger and salt.
Topping: In a medium bowl combine flour, dark and light brown sugar, butter, cinnamon, ginger and salt. Stir until the mixture resembles coarse crumbs.
Pour the peach mixture into a large baking dish. Sprinkle the topping evenly over the peach mixture.
Bake until the topping is golden and peaches are bubbling - about 45 to 50 minutes.
Serve hot or cold. Optionally top with ice cream.
