Mahi Mahi Ceviche
- 1 Mahi Mahi cut into ½" cubes
- 3 roma tomatoes cut into ¼" cubes
- ½ red union diced
- 2 jalapeno peppers small diced
- fresh pinapple cut into ¼" cubes
- 1 cup fresh lime juice
- ½ bunch cilantro leaves chopped
- ground black pepper
- salt
Cut mahi mahi into cubes and add salt and pepper to taste. Mix all ingredients. Refigerate for at least 1 hour and serve.
