Lemon Bars
Crust:- 1 stick unsalted butter
- 1 cup all-purpose flour
Pre-heat oven to 350º. Mix the butter and flour and pat into the bottom of a well-greased 9-inch square pan. Bake at 350º for 15 minutes.
Filling:
- 2 large eggs (beaten)
- 1 cup sugar
- 2 Tbl lemon juice
- 2 Tbl flour
- ½ tsp baking powder
Mix the beaten eggs, sugar, lemon juice, baking powder and the 2 Tbl of flour. Pour into the crust and bake for 25 minutes.
Remove from the oven. Sprinkle confectionary sugar over the top and cut into 2 or 3-inch squares.
