Fig Couscous
- ¾ cup dried couscous
- 3 oz (weight) dried figs
- 3 scallions
- 2 Tbs mint - chopped
- 2 Tbs cilantro - chopped
- 1 Tbs lemon juice
- 1 large clove garlic - finely chopped
- 2 tsp lemon zest - finely chopped
- 1 Tbs butter
- ¼ tsp salt
In a heatproof bowl, add 1½ cups boiling water to couscous. Cover and let stand for 10 to 15 minutes.
Chop figs, scallions, mint, and cilantro and place in separate mixing bowl. To this mixture, add lemon juice, lemon zest, and garlic and mix well.
Once couscous has absorbed all the water, fluff with fork, add all the ingredients, and mix well. Yields 4 servings.
