Melanie's Chicken Curry Salad
- 4 cups shredded baked chicken
- 2 cups halved grapes
- 1 cup toasted sliced almonds
- 1 cup mayonnaise
- 1 cup onions finely chopped
- ½ cup celery finely chopped
- 4 Tbs mild curry powder*
- ground black pepper
Bake one whole chicken (see Steve's Baked Chicken) or use one Cosco rotisserie chicken.
Remove skin and shred white and dark meat into bite-size pieces. It is better to pull the meat apart rather than cutting into pieces with a knife.
Add all the ingredients and mix well. (Curry power may be hot or mild or a mixture depending upon the desired degree of spiciness.) Add salt and freshly ground pepper to taste.
*Note: There are many types of curry powder and they can make a big difference in the taste of this dish. The best brand of mild curry powder to use is "Spicely" organic curry powder which can be obtained at Whole Foods.
